Pancakes
I like pancakes. I don’t eat them often enough really. But today, being Shrove Tuesday, Pancake Day and Mardi Gras, not to mention International Women’s Day, I decided to indulge.
A pancake meal should include both savoury and sweet, obviously, and this meal was no exception. I whipped up a nice batch of bacon, mushroom and tomato sauce and used this as the filling for my savoury pancakes. The result was a little something like this:

They were, even if I do say so myself, exquisite.
Then, of course, came dessert. Now, being International Women’s Day it wouldn’t be right to avoid marking the occasion in some way and, what with pancakes being so versatile, the combination was too good to pass up. And so, I invented the pink pancake:

Women of the world rejoice…I did this for you :)
But what should one do with a pink pancake? Well, I’d have to insist on creating something sweet to go with such a deliciously feminine article. Maple syrup would work as would the traditional sugar and lemon but I decided a touch of decadence was required. I knocked up a little chocolate and Cointreau sauce, sliced up a few strawberries and, voila, my dessert found form thusly:

So that was my pancake day, in pictures. How did you celebrate the occasion?
